Recipe: Prawn Curry (Dad's recipe)

Summary:

A sad day - this curry albeit fabulous was the loser in my curry cook-off.  See my blog post (October 2011) for more info.  Despite losing however this is a winner of a recipe - light and quick, using lots of store cupboard ingredients. Enjoy.

Number Served:

4 (but easily cut down for 2)

Ingredients:

1lb (450g) peeled prawns
1 tsp fresh ginger (about 1 inch)
1 tsp chopped garlic
2 tsp cumin seeds
2 tsp poppy seeds
1 tsp red chilli powder
2 medium onions
4 oz (113g) tomatoes
3 oz (85g) ghee/butter
1 cup water (if needed)
coriander leaves - handful
salt to taste

Method:

In a food processor grind onions, garlic, ginger, coriander leaves, cumin seeds, poppy seeds and red chilli powder until a smooth paste.
Fry mixture in butter until light brown – around 10-15 mins.
Add prawns and peeled chopped tomatoes.
Stir well, and cook until prawns are cooked – it will take just a few minutes.  Be careful not to overcook them.  Add water if needed.
